Mini Peach Pies

Indulge in the taste of summer with these Mini Peach Pies! Made with Freeze-Dried Peaches, you can enjoy this classic summertime dessert all year long.

Directions
1. Heat oven to 400 degrees and line a baking sheet with parchment paper. Coat lightly with nonstick cooking spray.
2. Reconstitute the peaches. Dump peaches into a medium bowl and cover with water. Allow to soak until fully rehydrated. Strain extra water if necessary.
3. Add sugar, cinnamon and nutmeg to the rehydrated peaches, and coat evenly.
4. Using a 4-inch bowl as a guide, cut 5-6 circles from pie crust. Roll out each circle slightly, then place on the baking sheet.
5. Place 1 tbsp. of graham cracker crumbs in the center of each crust. Divide peaches among crusts.
6. Fold the edge of each crust up and over peaches. Sprinkle each pie with 1/2 tsp. of sugar.
7. Bake 25 minutes, until pies are golden brown. Let cool 3 minutes before serving. If desired, serve with vanilla ice cream or whipped cream. Enjoy!
