Fruit Crisp Coffee Cake

This quick, easy, and yummy Fruit Crisp Coffee Cake will be the best way to start your mornings! Made with Brothers All Natural Peach and Fuji Apple Fruit Crisps!

Ingredients

  • 8 ounces plain flour
  • 4 ounces sugar
  • 1 teaspoon baking powder
  • 3 eggs
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 1/2 ounces unsalted butter, melted
For the Glaze
  • 2 cups confectioners sugar
  • 2-4 tablespoons milk
  • 1/2 teaspoon vanilla extract

Directions

1. Sift flour, sugar and baking powder into a bowl.

2. Make a well in the center of mixture and add the eggs, milk, and vanilla extract. Mix in well to form a smooth batter.

3. Add 4 TBSP of the melted butter.

4. Let batter stand for 30 minutes.

5. Preheat oven to 450 Degrees. Butter an 8 inch round cake tin.

6. Stir in 2 bags of Peach and Fuji Apple fruit crips (lightly crushed) into the batter and pour into prepared tin.

7. Bake for 30 minutes or until a toothpick inserted in center comes out clean. When still warm (but out of the oven), stick extra freeze-dried apples and peaches onto the top of the cake. These will get soft with the warmth of the cake.

8. Cool completely. While cooling, prepare the glaze: Whisk together all ingredients until you get your desired consistency.

9. Once cooled, drizzle glaze over top of cake. Crush the additional peach fruit crisps into a fine powder with a blender or food processor and sprinkle on top.
