Apple Cider Cupcakes (Gluten-Free)

Discover the essence of autumn in every bite with these Apple Cider Cupcakes. This recipe, crafted with a gluten-free option, combines the warmth of seasonal spices and the richness of freeze-dried apple cinnamon fruit crisps. Perfect for celebrating the season with a sweet twist!

Ingredients

  • 1 1/3 cup oat flour or gluten-free all purpose flour (you can also use regular all purpose flour)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • pinch of cloves
  • 1/2 cup butter, melted. (you can use coconut oil or dairy-free butter alternative as well)
  • 1/3 cup brown sugar
  • 1/2 cup apple cider
  • 1 tsp vanilla
  • 2 eggs
  • 1 16 oz tub of frosting, flavor of your choice (we used cream cheese for a fun, fall taste!)


Directions

1. In a small bowl, combine your dry ingredients: flour, baking powder, salt, cinnamon, nutmeg, allspice and cloves and stir them together.

2. Rehydrate freeze-dried apple cinnamon fruit crisps: In a bowl, add freeze-dried Apples and cover with water. Allow the apples to soak in water and rehydrate until soft. Drain extra water if needed.

3. In a large mixing bowl, cream your butter and brown sugar together with a mixer. Add your rehydrated apples, apple cider, and vanilla and mix again till all is well combined. Add your eggs and beat them into the mixture for a minute.

4. Add your dry ingredients to your wet ingredients and stir together till you have a smooth cupcake batter.

5. Preheat your oven to 350. Line a cupcake pan with cupcake liners and spray them with non-stick spray.

6. Fill your cupcake liners about 3/4 way full. Bake for 18-22 minutes, or till the tops are springy to touch and a toothpick comes out clean.

7. Once cooled, top with frosting of choice, and sprinkle additional apple cinnamon fruit crisps on top!
